ORANGES IN OIL

INGREDIENTS:

Oranges. Salted cod. Olive oil. Hard-boiled egg. Roasted garlic (optional). Tuna (optional). Pomegranate (optional).

PREPARATION:

Peel and cut the oranges. Add the salted cod in pieces. A good drizzle of raw olive oil. It can be complemented with hard-boiled egg and pomegranate. It is a seasonal dish, in winter and spring, when oranges are juicier. It is usually taken by olive pickers or field workers in their capacha for lunch when they want to take a break from their daily toil.
